One more week of school. Just one more week. I can get through it. The question is, can I get through it and still manage to feed my children some sort of dinner that consists of more then crackers and peanut butter? Sigh. It seems like the last six days have been nothing but drop and run here, pick up and dash there, with a whole bunch of eating on the run. Believe it or not, my kids are getting tired of re-heated foods. Huh. “Leftovers’ is becoming a dirty word.
One quick way to stop the “I don’t want leftovers again” whining? Maple Leaf Prime Naturally Portions™.
Maple Leaf Prime Naturally Portions™ are 4 boneless, skinless chicken breasts individually wrapped and vacuum sealed inside an easy open and easy close outer bag.
Thanks to this fabulous wrapping I can pull out what I need for the first dear daughters meal at 5pm, then pull out another chicken breast at 7pm for the second child’s meal! If I am feeling particularly generous (and want to spoil my Hubby by cooking for him too) I can even indulge the next day in a late dinner with the Hubby and that chicken will still be fresh! All thanks to the individual wrapping. Yep, I can use what I need and save the rest for later. Good for later that day, later that week, or to stick in the freezer for later that month! Protects the fresh and prevents the leftover whining! Genius.
Oh and by the way I am in no way a domestic goddess creating huge meals for my babes at their whim. I am however all about nutritious, yummy and easy. Here is a quickie recipe from Maple Leaf Prime for a Buffalo Chicken Wrap that can be ready in only 10 minutes!!
You will need!
- 5 ml Vegetable oil
- 1 Prime TM Portions Boneless Skinless Chicken Breast
- Salt and Pepper to taste
- 15 ml BBQ Sauce
- 5 ml Ranch Dressing
- 30 ml Shredded Carrots
- Green Leaf Lettuce
- 2 Small Tortillas
Then you just:
Heat up the veggies in a small fry pan over medium heat for just a minute. ( I prefer them crunchy) Season the Chicken Breast with Salt and Pepper until lightly browned. Add 30 ml of water to the pan cover and cook for 4 minutes on each side until it is cooked through. Remove from pan and slice into strips, Whisk together the barbeque sauce, hot sauce and salad dressing in a bowl. Add chicken and carrot, toss to combine. Divide the chicken mixture onto tortillas and top with lettuce, my girls like a little cheese too!
Enjoy!

Chicken Satay (peanut sauce). Yummy and quick. Can top spicy rice and veggies easily. Pre-make and grill – freeze or refridgerate for later.

My family loves my easy chicken parmesan. Cook 1 or 2 chicken breasts- cut into bite sized piecesa and add spaghetti sauce and 1/4 c. Parmesan cheese. Cook pasta. Put pasta in baking dish and cover with chicken and sauce. Bake about 10 minutes, sprinkle with grated cheese, and return to oven until the cheese is melted.

I love the hearty Chicken Bake – Mix 3 cups mashed potatoes, 1/2 cup cheddar cheese and 1/2 can of French fried onions and press into casserole dish (like a crust). Mix 1 1/2 cups cubed chicken, 1 1/2 cups mixed veggies, 1 can cream of chicken soup, 1/4 cup milk and some garlic powder and pepper. Put into crust. Cook until heated through (about 30)then top with 1/2 cup cheese and more french fried onions and bake for 3 more minutes.
So good!

Thanks for sharing the recipe. It sounds delicious!
On another note, I’m curious as to how the school year works in Canada. Here in the states kids typically go from Labor Day to the first week in June. It seems you have a longer school year; but maybe that’s why Canadians are smarter than us! 🙂
