One more week of school. Just one more week. I can get through it. The question is, can I get through it and still manage to feed my children some sort of dinner that consists of more then crackers and peanut butter? Sigh. It seems like the last six days have been nothing but drop and run here, pick up and dash there, with a whole bunch of eating on the run. Believe it or not, my kids are getting tired of re-heated foods. Huh. “Leftovers’ is becoming a dirty word.

Oh and by the way I am in no way a domestic goddess creating huge meals for my babes at their whim. I am however all about nutritious, yummy and easy. Here is a quickie recipe from Maple Leaf Prime for a Buffalo Chicken Wrap that can be ready in only 10 minutes!!
You will need!
- 5 ml Vegetable oil
- 1 Prime TM Portions Boneless Skinless Chicken Breast
- Salt and Pepper to taste
- 15 ml BBQ Sauce
- 5 ml Ranch Dressing
- 30 ml Shredded Carrots
- Green Leaf Lettuce
- 2 Small Tortillas
Then you just:
Heat up the veggies in a small fry pan over medium heat for just a minute. ( I prefer them crunchy) Season the Chicken Breast with Salt and Pepper until lightly browned. Add 30 ml of water to the pan cover and cook for 4 minutes on each side until it is cooked through. Remove from pan and slice into strips, Whisk together the barbeque sauce, hot sauce and salad dressing in a bowl. Add chicken and carrot, toss to combine. Divide the chicken mixture onto tortillas and top with lettuce, my girls like a little cheese too!

My family loves my Tex-Mex Chicken Burritos. Quick and easy to make and SO delish!
4 cups chicken, cooked and shredded
1 (8 oz) package cream cheese
1 (15 ounce) can black beans, drained
1 (10 ounce) can diced tomatoes with green chilies (I used Rotel)
1/2 teaspoon cumin
1/2 teaspoon salt
Mix tomatoes and cream cheese in a large pan and heat over medium heat until cream cheese is melted. Add remaining ingredients and heat through. Serve in tortillas.

We like Mock Chicken Pot Pie.
2 cans of cream of chicken-mushroom soup
1 soup can of water
chopped onions
4 chicken breasts
1 bag of baby carrots
5 potatoes, peeled and chopped.
1 cup peas
1 can of refrigerator buttermilk biscuits
Boil chicken breasts in soup/water until cooked, remove chicken and chop into chunks.
Place chopped chicken, carrots, onions and potatoes back in pot and cook until veggies are tender. Add 1 cup of frozen peas and cook 5 more minutes. Preheat oven to 350 degrees.
Pour mixture into a 9×13 pan. Top with refrigerator biscuits cut in halves. Cook until biscuits are brown, about 10 minutes. Let sit 5 minutes before serving.
