You now what feels kinda great? When your babies drag their heavy backpacks into the house after a long day of school and immediately exclaim “What smells SO good?” and you can shock them with this response; “Oh no big deal, just a wee turkey roasting away in the oven.” Yes, this week this Mama made it to Domestic Goddess status!
During the week our family’s schedule is like most, the after school hours flex somewhere between “frantic” and “where are we supposed to be tonight?”. With all the chaos of homework, and running the girls to volleyball, cheer and dance; finding the time to cram in a real family dinner has become a true challenge. Turkey dinners? They are for special occasions only right? Not anymore!! Thanks to Butterball I have found an easy way to make weekday meals special!
This week I stopped by my local grocery store and picked up this Butterball Boneless White and Dark Turkey Roast.
Once I got it home I couldn’t believe how simple the instructions on the box were.
Simply take out of the box, remove the plastic covering, place in a casserole dish, brush with oil and bake! What? Wait. No HOURS of defrosting. No gross guts to take out of it. No stuffing required. Inspiration struck and I decided to whip up a turkey dinner right then and there.
I pulled the turkey out of the box and had a peek. I will admit, at this point the turkey, it`s not beautiful, but then again frozen poultry never is. I basted will oil, popped it in the oven and hoped for the best. Simple!
By the time the kids got home from school the house was full of that fantastic Turkey Dinner Smell, and by 5:30pm dinner looked like this!
Oh how I wish those pictures were scratch and smell!! Added potatoes, corn, salad and of course some stuffing, and I was ready to go. When Hubby walked in the door you could have knocked him over with a feather. Happy man!
We sat down to the easiest turkey dinner we have ever had. Confession; we even ate it off TV trays in the family room. Dinner over, there was a super quick clean up with just two pots and one casserole dish to throw in the dishwasher, then we were out the door to carpool.
The verdict is in; these Butterball Boneless White and Dark Roasts are perfect for making any night a special occasion. We will be celebrating with turkey more often.
Oh and PS Turkey sandwiches warmed with leftover stuffing for dinner the next night? Helps maintain that domestic Goddess Status.

Think I would prefer buying a cooked roast chicken from Costco instead of turkey out of the box.

Yum. And easy. This actually might be a great idea for my Mondays…you know that day, it’s the one where you have so many kid’s activities to drive to that you have no time to cook? Love this idea for then…

I’m convinced! Well, except that I’m cooking for only two now and that means lots of turkey leftovers! 🙂
