School’s back!
I know, I said the “S” word. The good news? September is the perfect month to get re-organized, start anew and get your groove back! During the school year my girls run me ragged. From School to Dance classes. From Volleyball practice to Cheer events. I am not exaggerating when I say there is “something” every single night of the week. How do I survive? As we run from activity to activity I’ve had to develop some go to family favourites. One that screams comfort and love? Creamy Slow Cooker Macaroni and Cheese. Friends, meet the easiest, creamiest, most sinful mac and cheese you will ever eat.
Slow Cooker Mac and Cheese
Ingredients:
- Non-stick cooking spray
- 2 cups uncooked elbow macaroni
- 4 tablespoons butter
- 2 1/2 cups grated sharp cheddar cheese (or medium cheddar if you prefer)
- 1/2 cup sour cream
- 1 (10.75 oz) can condensed cheddar cheese soup
- 3/4 teaspoon salt
- 1 cup milk (I used 1%)
- 1/2 teaspoon dry mustard
- 1/2 teaspoon black pepper
Directions:
Boil the elbow macaroni in water for five to six minutes, drain and set aside. In a medium saucepan, mix butter and cheese. Heat over medium high heat and stir until the cheese melts. Watch it carefully. You want these ingredients to just melt, not cook! Spray your slow cooker with non-stick cooking spray. Combine cheese mixture, sour cream, soup, salt, milk, mustard and pepper in your slow cooker. Add the drained macaroni and stir again. Cook on low for 2 to 2 1/2 hours, stirring occasionally (I cooked mine for about 2 hours, checked it three times and stirred it twice and it was perfect).
Stir, serve and enjoy!
Want to really wow them? Crumble some cooked bacon on top. YUM!

Note: When I’m in a rush (aka forgot to get dinner organized) I can crank up the heat to high and have the Mac and Cheese ready in about 1 1/2 hours. More organized than me? Brilliant! Make it ahead of time and then this fancy small appliance will shift to warm to keep dinner hot until you are ready!
I love smelling a roast simmering all day, get a kick at pulling off home made meat balls with some cheater spaghetti sauce, and have even tried my hand at some oatmeal, timing it so it’s ready just in time for breakfast! The possibilities are endless with a slow cooker. Huh, who knew you could be so excited about dinner?
