March Break is here! Can we get a Hallelujah? This years break from school has us packing up the kids and headed to a gorgeous cottage on the lake. A few days of relaxation away from the suburbs. If only the “getting ready and getting there” was as easy as blissful as the time away.
The only way to survive a trip to the cottage with a Great Dane Pup and a pack of teens? Preparation! Queen of the lists; this year I was ready. A massive grocery shop completed, a trip to Costco and of course a stop at Indigo. The treasure I was seeking? A book my girlfriends had tipped me off to; The “oh she glows” Cookbook by Angela Liddon.
Knowing a little bit of prep goes a long way I chose to dive in right away, getting my domestic goddess on with a little Maple-Cinnamon Apple and Pear Baked Oatmeal. Sigh, breakfast perfection. Here’s what you need to create a fab breakfast for about six:
Ingredients
2 1/4 C rolled oats
2 Tbsp brown sugar or coconut
2 tsp cinnamon
1 tsp baking powder
1/2 tsp ginger
1/2 tsp sea salt
1/4 tsp nutmeg
2 C almond milk
1/2 C unsweetened applesauce
1/4 C pure maple syrup
2 tsp vanilla
2 apples, peeled and diced
1 ripe pear, peeled and diced
1/2 cup walnuts chopped (optional, but not really!)
Directions
Preheat oven to 375˚F. Lightly grease a 2-quart glass baking dish.
Combine oats, sugar, cinnamon, baking powder, ginger, salt, and nutmeg. Mix well.
In a separate bowl, stir together milk, applesauce, syrup, and vanilla. Pour the liquid mixture over the oats and stir until combined. Gently fold in the apples and pear.
Pour the mixture in the baking dish and smooth the top. Sprinkle the top with the chopped walnuts. Bake for 35-45 minutes or until bubbly around the sides. Cool for 5-10 minutes.
Enjoy right away, or store in an air tight container for five to six days. Absolutely fantastic when re-heated, just add a little almond milk. (or some ice-cream as a late night snack!)
This oatmeal bake is a huge crowd pleaser. Filling your home with an intoxicating aroma and pleasing everyone with it’s apple crisp like taste. In a word, it’s yummo.
So now I’m off. House sitter hired, groceries packed, and an incredible breakfast packed for our first morning at the cottage. Can’t wait to see what we get up to this year at the lake! Wishing you all a blissful March Break.
