No excuses! This is a phrase you will often hear uttered in my house. Sometimes under my breath, sometimes quite a bit louder and with considerable volume. Our house is a busy one. A family of four that includes a Husband who travels a lot and works ridiculous hours, one daughter notorious for skipping meals, and the other who dances about 16 hours a week. Our family schedule is like that of so many others we know, a wee bit crazed. But no matter how “scheduled” or busy you feel, there are simply no excuses for skipping breakfast. Your body needs a good breakfast to help you get through the hectic day ahead.
A good day starts with a good breakfast. Your body simply can’t run on empty! So no matter what’s going on in our sometimes stressful, occasionally disorganized mornings, we always time for a quick 5-minute breakfast. It’s a meal that needs to be made a priority. Life is busy, but breakfast inspiration can be found!
Our solution to the family breakfast rush? Eggs.
Eggs are a quick and easy way to make sure this family is starting their day off with an excellent source of protein. Each large egg contains 6 grams of protein and 14 essential nutrients like vitamins A, D, E, folate, iron and zinc, and working the goodness of eggs into your day is simple and actually much quicker than you think.
There’s a huge variety of delicious and nutritious egg recipes that can be whipped up in 5 minutes or less, even my teens can do it before they run out the door. No more excuses!
One new family favourite, Breakfast In A Mug.
Here are the simple instructions:
Ingredients:
- 1 slice whole-grain bread, cubed
- 2 tbsp (30 mL)finely chopped ham
- 2 tbsp (30 mL)seeded and diced tomato
- 2 tbsp (30 mL)shredded Cheddar cheese
- 1 tbsp (15 mL)finely chopped green onion
- 1 egg, beaten
- 2 tbsp (30 mL)milk
Directions:

Toss bread with ham, tomato, cheese and green onion. Transfer to a microwave-safe mug. Whisk egg with milk; pour over filling.

Microwave on High (100%) for 60 seconds; let stand for 10 seconds. Microwave on High (100%) for an additional 60 seconds or until set.
Notes: Use any of your favourite meat, veggies, and cheese to have a different breakfast each morning.
Eating eggs during the week can be as simple as scrambling, boiling, frying or even microwaving up some eggs in five minutes or less – it’s a little bit of prep with a big payoff!
